To start at Heartquist Hollow Farm, a Galette is a fancy way of saying free-form tart.  We start with a flakey, hand-rolled, buttery crust layered farm fresh pesto.  We then fill the Galette with sautéd shallots, artichoke hearts and sun-dried tomatoes.  The crust is fold in to hold the scrumptious filling before it is finished with mozzarella cheese.  The unique shape of this free-form tart lends itself to being a great hand held meal.  For those of you that prefer this as a breakfast item, I cannot recommend more highly the addition of an over-easy egg from on of our hens.
